Moka Express

The original product was updated in the 1990s, and now has a more elegant look, with the same functionality. If you enjoy stove top espresso, like the Italians do, then this is the product for you. Made out of Aluminium the pot is best suited to electric and gas stoves, and will not work with an induction cooker.

Venus

The Stainless steel version of the Moka Express was developed after concerns about side affects of Aluminium during cooking where surfaced. The Venus has the added benefit of also working on an induction cooker, and stays cleaner than the tradional pot.

How to make espresso in a Moka/Venus Express

  • Unscrew the pot and remove the coffee filter.
  • Add a little warm water (about 60°C) into the base of the pot, until the water level is just below the gasket.
  • Make sure you grind your coffee fresh. The grind level, to start with, is like course sand.
  • Add the coffee grinds to the coffee fitler, scraping off the top, making it level.
  • Insert the coffee filter into the pot and then screw the top on.
  • Place pot on the stove and set the stove to medium-low flame.
  • After 2-3 minutes, you will hear a bubbling noise, turn off the stove.
  • Once the coffee has settled, pour slowly into your espresso cup.
  • Things you can play with:
    • Grind size, remember more course is more falvour, finer more body.
    • Temperature of the starting water.
    • Adding hot water to your cup before you pour the coffee.

A reality new addition to the Bialetti family, is a new take on the Moka Express. The Brikka adds a pressure valve and produces crema, if you adhere to a few principles first. So here are some things to remember when making a espresso with a Brikka:

  • Unscrew the pot into the three pieces.
  • In the top part of the pot you will see a water level indicator fill with cold water to just below that level, do not go over. For the 2 cup this is 80g of water.
  • Pour water into the base.
  • Jiggle the valve in the top of the pot, to make sure it is loose.
  • Make sure you grind your coffee fresh. The grind level, to start with, is again like course sand.
  • Add the coffee grinds to the coffee fitler scraping off the top, making it level use something flat not your finger.
  • Insert the coffee filter into the bottom part of the pot and then screw the top on.
  • Place pot on the stove and set the stove to high flame.
  • Around 2-3 minutes you will hear a bubbling noise, turn off the stove.
  • If it is not producing crema the valve is stuck, jiggle the valve with the back of a teaspoon.
  • Once the coffee has settled, pour slowly into your espresso cup.

For those that love their cappuccino in the morning, or perhaps if you are not Italian at other times of the day too, there is the Mukka Express.

The Mukka Express uses the steam, from the espresso brew, to frother the milk at in the top of the pot to a great consistancy. The result is a very enjoyable cappuccino, that you just pour into your cup.

The preperation method is the same as the tradtional pot, except that you add milk into the top of the pot to the level indicated before you turn the stove on. Make sure you put the valve down before brewing, other wise you just get plain milk mixed with the espresso the pot produces.
