Perfect Temperature for Milk?
The ideal temperature for achieving perfect microfoam in milk is between 65°C to 68°C. Within this range, the proteins in the milk denature, creating a stable foam that blends beautifully with your espresso. Remember to use a thermometer to monitor the temperature closely during steaming. Jura recommends that the milk temperature for achieving perfect microfoam should be between 4°C and 8°C. It’s the protein content in the milk, rather than its fat, that contributes to the consistency of the foam.
