Water for coffee

Over the years, we’ve experimented with various methods to ensure that the water we use for making coffee is perfectly suited to our offerings. Through experience, we’ve learned that water with minimal bicarbonate content and at least 100 ppm of magnesium and calcium is essential (you can read more about this here). While most municipal water in South Africa is safe to drink, it doesn’t necessarily meet the requirements for brewing excellent coffee.

We’ve explored options like distilled water and third-party mineral additives (such as Third Wave), but these improvements come with financial and labour investments. In the past, we even discussed using filtered water with a magnesium buffer (you can find that post here). However, we’ve been searching for a more practical solution.

Enter the BWT magnesium jug. We’ve finally had the chance to experiment with it, and the results are impressive. By directly pouring municipal water into the jug, you get mineralized water enriched with magnesium. Here’s what we’ve learned:

  • Tap Water: Always use water straight from the tap—avoid filtered water, as it can make the coffee taste metallic.
  • Fruity African Coffees: The water accentuates and sweetens the fruit notes in these coffees.
  • American Coffee: We noticed more intense umami flavours, enhancing the coffee’s body.

Our Colombian Coffee Range

An Update on Our Colombian Coffee Range

Since 2008, our Colombian coffee range has been a cornerstone of our offerings. In the past, we committed to these coffees by forward booking them twice a year. We loved being part of the entire process, from sourcing to brewing. However, recent challenges have prompted us to reevaluate our approach. The last shipment took months to arrive, and the logistics—along with rising coffee prices—have become significantly more expensive. As a result, we’ve decided to pause our Colombian imports for now.

Here’s what you need to know:

  1. Financial Considerations: Paying in advance for sizable coffee shipments is no small feat. Last year, we faced unexpected setbacks, and we’re determined not to repeat that experience.
  2. Transition Ahead: As we approach the end of our current Colombian offerings (Asorganica, Los Idolos, Los Naranjos, La Piramide and La Serrania), we’ll scale down to 2 or 3 Colombian options. But fear not—we’re actively seeking high-quality alternatives to fill the gap.
  3. Budget-Friendly Shift: Some of our loyal customers have already transitioned to our more budget-oriented coffees. We have taken not of this transition.
  4. African Coffee Expansion: As a consolation, we’re expanding our African coffee selection. Keep an eye on our social media and website for exciting updates!
