Pink Bourbon, a rare hybrid of Red and Yellow Bourbon, offers exceptional sweetness, bright acidity, and unique complexity. At El Diviso, workers handpick these cherries at peak ripeness from high-altitude plots.

El Diviso’s Pink Bourbon Decaf Process

El Diviso preserves the coffee’s natural flavours while decaffeinating it through these key steps:

  1. Selective Harvesting: Workers pick only ripe cherries and use float tests and hand-sorting to ensure quality.
  2. Controlled Fermentation: The cherries oxidise for 12 hours (25°C), then ferment anaerobically for 60 hours (16–18°C). After pulping, they oxidise for another 18 hours, with reused leachates boosting flavour.
  3. Precision Drying: The beans dry on African beds, parabolic dryers, or mechanical dryers under strict conditions.
  4. Natural Sugarcane Decaffeination: Using local sugarcane EA, the process removes 99.7% caffeine on-site while preserving original flavours.
  5. Rigorous Quality Control: The Lasso family monitors each batch, ensuring SCA scores of 85+.
