This Green Colombian Tolima Reserve is a washed coffee we selected from Green Coffee Supply, which received this lot from Cofinet, who visited us in 2023. We purchased this coffee as a specialty grade blender, and are not offering it as a single origin.
Cofinet
For over 80 years, Cofinet has been a family business that has excelled in distributing premium Colombian coffee to local exporters. In 2015, they expanded into global specialty coffee markets. They innovate with unique fermentation processes at their farm and La Pradera Processing Centre, achieving distinctive flavours in Colombian coffee.
Cofinet supports many Colombian Specialty coffee growers, aiming to connect them directly with roasters worldwide. They’ve also partnered with Peruvian associations that align with their sustainability values. Together, they enhance coffee quality and develop new profiles, eagerly anticipating sharing these exceptional coffees globally.
Tolima Reserve
The Tolima reserve program, located in the Tolima department, boasts a rich history that enhances the region’s allure. Initially, it served as a refuge for political prisoners from the Liberal party. Eventually, the Liberal and Conservative parties formed a harmonious bond, fostering the renowned hospitality of Tolima’s residents.
Green Colombian Tolima Reserve
A washed coffee that has nectarine, citrus, and honey notes, with a cream mouthfeel and malic acid. This is a great coffee for home roasters to try, especially if they are using the Behmor 2020SR coffee roaster. We recommend a development time of around 30 seconds to accentuate the flavours. Cofinet call this a Regional Specialty coffee
