Colombia consistently ranks among the world’s top coffee producers, thanks to its diverse geography and ideal growing conditions. The Huila region, located in the southwest, stands out for its high altitudes, rich volcanic soils, and stable climate. These factors combine to produce coffees with bright acidity, layered fruit notes, and exceptional clarity.

Finca Las Guineas began as a small family farm in the hills of Isnos, Huila. Over time, Fabian Murcia transformed it into a hub for innovation by introducing varietals like Geisha and Pink Bourbon. Inspired by Colombia’s growing specialty movement, Fabian partnered with Elkin Guzman (whose coffees we have offered before) and Rodrigo Sanchez to refine his processing methods. Their shared vision focuses on sustainability, traceability, and cup excellence. Today, Las Guineas is recognised for producing coffees that reflect both the characteristics of a specialty coffee from Huila and the forward-thinking spirit of its producers.

Pink Bourbon Washed Process

Pink Bourbon, a rare hybrid of Red and Yellow Bourbon, offers exceptional sweetness, bright acidity, and unique complexity.

  • Selection: Cherries are harvested at 24°–28° Brix and pH 5.6–5.9.
  • Fermentation: Coffee undergoes a 34-hour fermentation in a tank after pulping.
  • Drying: After washing, the beans are sun-dried for 4–5 days, then moved to shaded canopies for 18 days to complete the drying process.
