Guatemalan Coffee History

Initially, indigo and cochineal dominated as Guatemala’s primary crops. However, when chemical dyes disrupted that industry, Guatemalans quickly transitioned to planting coffee trees. By the mid-1800s, more than half a million coffee trees were already thriving across the country. As the government introduced economic incentives, coffee production accelerated and became a cornerstone of the national economy.

Today, coffee remains Guatemala’s largest export crop. It is cultivated throughout the country, particularly in Antigua, Fraijanes, Cobán, Huehuetenango, Atitlán, San Marcos, and Santa Rosa. Yet, one of the most persistent challenges for Guatemalan coffee has always been labor availability and cost, which continue to shape the industry.

Guatemalan Blue Ayarza coffee

Blue Ayarza showcases the collective effort of numerous smallholder farmers in the Ayarza region of Santa Rosa. Covoya’s cherry mill processes this washed lot and enforces strict standards to guarantee consistent quality. Traditionally, Guatemalan farmers processed coffee individually, which created challenges for quality control. Consequently, Covoya’s team transformed the system by centralizing processing, paying premiums for ripe cherries, and applying uniform methods.

Moreover, the Ayarza region itself captivates with dramatic volcanic landscapes and the striking blue waters of Laguna de Ayarza and Laguna Azul. Two massive volcanoes collapsed and created a vast crater, which now holds these lakes. As a result, the unique geography and climate shape the distinct character of Blue Ayarza.

Finally, the processing method blends tradition with innovation. Farmers depulp the cherries, ferment them for 4–6 hours, mechanically demucilage them, and then dry them on patios. This hybrid approach not only conserves water but also preserves the clarity and brightness of the cup profile.
