The farm benefits from two harvests each year: the main harvest between June and July, and a secondary mitaca harvest from October to November.

Erika Mayerly Perez is a first-generation coffee producer based in Gigante, a municipality in the Huila department of Colombia.
Erika is involved in every stage of coffee production on her farm, Las Nubes, in Huila, Colombia. She begins by cultivating Castillo and Colombia varieties across 12 hectares of coffee-planted land. During harvest, she carefully selects ripe cherries and uses a submersible pump to separate floaters—this step helps ensure only high-density, healthy cherries move forward in processing.
Once sorted, Erika ferments the cherries in plastic containers, a method that allows her to control temperature and microbial activity more consistently. After fermentation, she dries the coffee on patios under the sun, monitoring conditions to avoid over-drying or uneven results. She manages two harvest cycles each year: the main harvest from June to July and the mitaca harvest from October to November.
Beyond the physical work, Erika collaborates with Coocentral, a cooperative that supports her with technical advice and helps improve post-harvest practices. She also participates in quality control and traceability efforts, ensuring her microlots meet specialty standards.
